Orange Chocolate-Chip Bread

Notes
- Can be made with egg replacer (1 tbsp replacer and 2 tbsp water)
Yields
- 2x mini-Bundt: 1.5x recipe (1.25x if using extra chocolate), about 500 g per mini-Bundt, 40 minutes
- 1x Bundt (10”): 2x recipe, 55 minutes
- 1x 4” x 8” loaf pan: 1x recipe, 45 minutes at 350 °F then 20 minutes at 325 °F.
- 3x 8” round pans: 2x recipe, 25-30 minutes
- 1x 9” x 13” pan: 2x recipe, 30-35 minutes
- 12x standard muffins: 1x recipe, 5 minutes at 425 °F, ~15 minutes at 350 °F
- 48x mini-muffins: 1x recipe, 5 minutes at 400 °F, 6 minutes at 350 °F
Ingredients
- 2 cups (240 g) all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup (100 g) packed light brown sugar
- ¼ cup (50 g) granulated sugar
- 2 tablespoons orange zest
- 1 large egg
- ½ cup (115 g) melted coconut oil
- 1 teaspoon vanilla extract
- ⅔ cup (157 mL) whole milk
- ¾ cup (150 g) semi-sweet or dark chocolate chips
Steps
- Preheat the oven to 350 degrees. Grease a 9” x 4” loaf pan and set aside.
- In a large bowl, whisk together the flour, baking powder and salt.
- In another bowl, whisk together the orange zest, brown sugar, and granulated sugar until mixture becomes fragrant. Add egg and beat until combined. Slowly add oil and beat until combined. Add in the vanilla.
- In alternating additions, add the dry ingredients and the milk to the wet ingredients. Mix until just combined.
- Gently fold in the chocolate chips. Do not over-mix.
- Transfer the batter into the prepared pan and use a spatula to smooth the top. Bake for about 50 to 55 minutes, until a tester inserted into the middle of the bread comes out clean. If the top starts to brown too quickly, tent loosely with aluminum foil. Once the bread is cool enough to handle, gently run a butter knife around the edges of the pan to loosen. Remove to a wire rack to cool completely.
Variations
Cranberry-Chocolate
- Omit the orange zest and increase vanilla extract to 2 tsp.
- Reduce chocolate chips to 125 g, and add 100 g dried cranberries (stir in at the same time as the chips).
