Blueberry Cobbler (Cake-Style)
Ingredients
- 4 cups (600 g) blueberries
- 4 tbsp (50 g) sugar
- 1/3 cup (80 mL) orange juice
- 1 1/3 cup (160 g) flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup butter, softened
- 1 cup (210 g) sugar
- 2 eggs
- 1 tsp vanilla extract
Steps
- Preheat oven to 375 °F.
- In a 9-inch round baking dish, mix blueberries, 4 tbsp sugar, and orange juice. Spread evenly. Set aside.
- In a small bowl, mix flour, baking powder, and salt. Set aside.
- In a medium bowl, cream together butter and 1 cup sugar until light and fluffy. Beat in eggs one at a time, followed by vanilla extract. Gradually add flour mixture, mixing until just combined.
- Drop batter by rounded tablespoons over blueberry mixture. Try to cover as much of filling as possible.
- Bake in preheated oven for 30-35 minutes, until topping is golden brown and filling is bubbling.
