Berry Filling

Enough for a three-layer trifle.
Ingredients
- 1,350 g strawberries, raspberries, blackberries
- 75 g sugar
- Juice of 1 lemon
- 50 g (5 tbsp) cornstarch
- 50 mL water
Steps
- Make a cornstarch slurry: combine the cornstarch and water, whisking together until no clumps remain.
- Combine the berries, sugar, and lemon juice in a saucepan over medium-high heat. Bring to a simmer and cook just until the berries begin to break down and give up their juices, about 3 minutes.
- Lower the heat. Temper the cornstarch slurry by whisking in spoonfuls of hot berry juice, then add the cornstarch slurry to the saucepan. Continue mixing vigorously so that the cornstarch doesn’t seize up. Raise the heat and cook until the mixture thickens and bubbles, about 1-2 minutes.
- Take the berries off the heat and let cool; the mixture should thicken up as is cools.
