Cherry Filling
Ingredients
- 680 g jar of black or sour cherries, drained, chopped into quarters
- 1/3 cup cherry juice from the jar
- 3 tbsp corn starch
- 45 g super fine sugar
- 2 tbsp Kirschwässer
Steps
- Make a paste with a small amount of the cherry juice and the corn starch. Whisk in the rest of the cherry juice.
- Add the sugar and bring to a gentle simmer.
- Add the cherries and bring to a boil, gently stirring. Remove from the heat as soon as it begins to boil and thicken.
- Pour in the Kirschwasser and stir to combine.
- Allow the mixture to come to room temperature and thicken.
