M’s Blueberry Oat Muffins

  1. Combine the rolled oats and buttermilk in a small bowl. Let stand.
  2. Combine flour, baking powder, baking soda, salt and sugar in a mixing bowl. Stir well to blend.
  3. Add the egg and melted butter to the oat mixture. Mix well.
  4. Add oat mixture all at one to the dry ingredients. Stir just until the ingredients are moistened.
  5. Gently fold in blueberries.
  6. Fill well-greased muffins cups 3/4 full.
  7. Bake at 400 F for 15-20 minutes (or 18 minutes at 375 F).
