M’s Blueberry Oat Muffins

Makes 12 small muffins.
Ingredients
- 1 cup rolled oats
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup lightly packed brown sugar
- 1 egg, beaten
- 1/4 cup melted butter
- 1 cup fresh or frozen blueberries, well drained
Steps
- Combine the rolled oats and buttermilk in a small bowl. Let stand.
- Combine flour, baking powder, baking soda, salt and sugar in a mixing bowl. Stir well to blend.
- Add the egg and melted butter to the oat mixture. Mix well.
- Add oat mixture all at one to the dry ingredients. Stir just until the ingredients are moistened.
- Gently fold in blueberries.
- Fill well-greased muffins cups 3/4 full.
- Bake at 400 F for 15-20 minutes (or 18 minutes at 375 F).
