Puff Pastry Pain au Chocolat

Ingredients
- 2 sheets frozen puff pastry (one 17.3-ounce package), thawed
- 1 large egg beaten to blend with 1 tablespoon water (for egg wash)
- 400 g chocolate (bittersweet or semi-sweet), roughly chopped
- Sugar, for sprinkling (optional)
Steps
- Preheat oven to 400 °F. Line baking sheet with parchment paper.
- Cut each sheet of puff pastry into 12 squares. Brush tops of squares with egg wash.
- Divide chocolate equally between squares, placing chocolate on one edge of the square.
- Roll dough up tightly, enclosing chocolate. Place pastry rolls on baking sheet, seam side down.
- Brush tops of pastry rolls with remaining egg wash. Sprinkle lightly with sugar.
- Bake until pastries are golden brown, about 15 minutes. Serve warm or at room temperature.
Make-Ahead Notes
Can be made 1 day ahead. Prepare rolls through step 4 (do not brush with egg wash), then cover with plastic wrap and refrigerate. Cover and refrigerate remaining egg glaze. Resume from step 5.
