Puff Pastry Pain au Chocolat

  1. Preheat oven to 400 °F. Line baking sheet with parchment paper.
  2. Cut each sheet of puff pastry into 12 squares. Brush tops of squares with egg wash.
  3. Divide chocolate equally between squares, placing chocolate on one edge of the square.
  4. Roll dough up tightly, enclosing chocolate. Place pastry rolls on baking sheet, seam side down.
  5. Brush tops of pastry rolls with remaining egg wash. Sprinkle lightly with sugar.
  6. Bake until pastries are golden brown, about 15 minutes. Serve warm or at room temperature.

Make-Ahead Notes

Can be made 1 day ahead. Prepare rolls through step 4 (do not brush with egg wash), then cover with plastic wrap and refrigerate. Cover and refrigerate remaining egg glaze. Resume from step 5.
