Honey Soy-Glazed Pork Tenderloin

Yield
2-3 lbs. pork tenderloin.
Ingredients
- 3 tablespoons olive oil
- 3 tablespoons soy sauce
- 1/4 cup honey
- 1 tablespoon fresh lime juice
- 4 cloves of garlic, minced (or substitute ½ teaspoon garlic powder)
- 1 teaspoon ground ginger
- ½ teaspoon ground pepper
- 2-3 pounds pork tenderloin(s)
Steps
- Add to a large zip-top plastic bag the olive oil, soy sauce, honey, fresh lime juice, minced garlic, ground ginger, and ground pepper. Stir/shake together. Add tenderloin(s) and turn to coat all sides. Seal bag and refrigerate for at least 1 hour, or until ready to cook, up to a day.
- About 30 minutes before cooking, take the tenderloin(s) out of the fridge and allow to come to room temperature. Preheat oven to 425 °F.
- Heat a thin layer of neutral oil in an oven-safe skillet to 450 °F. Remove tenderloin(s) from zip-top bag and transfer to skillet, saving the marinade. Sear all sides of the tenderloin(s) until a golden-brown crust forms. Transfer skillet to oven and bake for 15-20 minutes, until meat thermometer reads 145 °F in the thickest part of the tenderloin(s). Meanwhile, bring remaining marinade to a simmer in a shallow pan and let cook until thick.
- Remove from oven and let tenderloin(s) rest, covered with foil, for about about 5-10 minutes before slicing. Drizzle sliced meat with any remaining glaze.
